A lightened-up version of the classic Philly cheesesteak sandwich. Made in under 20 minutes, Lean Beef Cheesesteak Skillet is a simple weeknight meal that’s high in protein and low in cost.
If there’s a food trend that’s hitting my kitchen this year it’s skillet meals. I have no idea if this is a national trend or a real culinary trend, but I’m proclaiming it a Serbinski one. And for good reason: skillet meals, like this lean beef cheesesteak skillet, are a one-pan meal, which means easy cleanup. I also find them to be easy on our budget— as you can see by these pictures, a few ingredients go a long way and can serve a few more than a family of four! A true cook once and dine twice meal concept.
While I could go on and on about being the cook and cleanup person in my house [when do toddler’s learn to do this?], let’s get back to the budget part and why this lean beef cheesesteak recipe is budget-friendly. Before kids, I never noticed how much we spent on groceries. Two full-time incomes and not many expenses meant I grocery shopped blindfolded— and realize what a privilege that was. Now that I have two little boys eating at our table, I’m amazed at how much I CAN spend on groceries. But with a little planning and taking the time to plan meals around circular deals, I make it a point to stretch our budget while still getting plenty of healthy foods in our tummies.
Lean ground beef is something you can usually find on sale once or twice a month at the grocery store— so be sure to stock up and freeze it when you find it! And as for the mozzarella cheese, you can usually do a brand comparison and choose from there. I like to shred my own even though you can find pre-shredded— which is another money-saving trick. Add some fresh onion and green bell pepper, and you have yourself a $10 lean beef cheesesteak skillet dinner. This meal can also be a cook once dine twice meal. Serve on mini dinner rolls one night and as filling in quesadillas or a topping for baked potatoes the next.
- 1 tablespoon olive oil
- ½ yellow onion, diced
- ½ green bell pepper, diced
- 1 pound lean ground beef [93% lean or leaner]
- 2 teaspoons Worcestershire sauce
- ½ cup beef broth
- 1 ½ teaspoons Italian seasoning
- 1 cup mozzarella cheese, shredded
- Heat olive oil in a large case iron skillet or large fry pan. Add onions and green bell pepper. Sautee until tender, about 7-10 minutes.
- Add ground beef and cook until browned. Once beef is cooked through, add Worcestershire sauce, broth and seasonings. Bring to a boil.
- Turn down heat and simmer for 10 minutes. Top with shredded mozzarella cheese and serve immediately with whole wheat rolls or flatbread.
